pomegranate mint vinegarette

Sea scallop rockafeller, candied pancetta,
chilli lime oil and pistachio soil

Sashimi of Mulloway, sesame citrus dressing,
shaved snow pea salad and seaweed

Raspberry glazed kangaroo fillet, celeriac and cumin puree,
truffled mushroom and roasted parmesan shard

Prawn stuffed fillet mignon, roasted cauliflower and
almond couscous and whiskey peppercorn jus
